How To Make An Earl-Tini Cocktail

This month, we're throwing a tea party and resident cocktail creator Annie Claire Hudson has put together a ladylike cocktail for your enjoyment.

Tea parties are known for their tiny sandwiches, dainty cups and lacy doilies. They remind us to be delicate, patient and soft. But ya know, it's 2021, we can't be that soft anymore. Let's add a little punch to our tea. It's what we all need as we round out the end of this crazy year of the pandemic.


This cocktail maintains the delicacy of tea with it's Earl Grey syrup and whipped egg. The flavors are soft and sparkle with the splash of champagne. So pick up some tea cups from the thrift store, whip up some cucumber sandwiches and invite over your vaxxed friends to share this tasty summertime cocktail with. The Earl-Tini might just be your new go-to for summer afternoons.


THE EARL-TINI


Ingredients

  • 1oz Gin

  • 1oz fresh lemon juice

  • 1 egg white

  • Champagne

  • Ice

  • .75 oz Earl Grey syrup

  • 1 cup of sugar

  • 1 cup of water

  • 2 earl grey tea bags

You will need a cocktail strainer.


Recipe


Ahead of time, make the Earl Grey syrup

  • Combine 1 cup of sugar and 1 cup of water into a saucepan over medium heat

  • Stir until sugar is completely dissolved

  • Remove pan from heat and drop in 2 earl grey tea bags to steep

  • Store in refrigerator to cool

  1. Combine Gin, Lemon juice, Earl Grey Syrup into a shaker

  2. Add 1 egg white

  3. Do a dry shake (without ice)

  4. Add in ice and shake again

  5. Strain into a tea cup or cocktail glass

  6. Top with champagne
